Cave Central da Bairrada is a historic Portuguese winery founded in 1924 by José Ferreira Tavares in Anadia, the heart of the Bairrada region. Originally known as José Ferreira Tavares Lda., the company focused on producing aerated sparkling wines—a style that earned Bairrada the nickname “Portuguese Champagne” thanks to its cool Atlantic climate and high-acid native grapes. In 1977, the winery was acquired by Américo Matos, whose family still runs it today. Their Medusa label bubblies are made in the Charmat Method, allowing wines to develop natural effervescence through fermentation in sealed tanks, preserving their fresh flavors and offering great value.
