The Ramon Canals Cava Reserva Numerada is an elegant, traditional-method sparkling wine from the Penedès region of Spain, meticulously crafted from a classic blend of indigenous Catalan grapes: 50% Xarel·lo, 25% Macabeu, and 25% Parellada. Sourced from 100% organic vineyards, the juice undergoes a first fermentation by variety before being blended and bottled for its secondary fermentation. It is aged on its lees for a full 24 months, which gives the wine its hallmark complexity and character. In the glass, it pours a bright, pale yellow with luminous straw reflections and fine, highly persistent bubbles. The nose is delicate yet intensely layered, opening with a vibrant burst of citrus—such as lemon, tangerine, and orange peel—before revealing crisp orchard notes of green apple and ripe pear. This brightness is underpinned by a whisper of warm brioche, toasted nuts, and subtle minerality from its extended lees contact.
