Topophilia 2022 Sonoma County Cabernet Sauvignon
Tasting Notes
The Topophilia 2022 Sonoma County Cabernet Sauvignon is a beautifully structured, elegant New World red wine crafted by winemaker Jess Wade from premium vineyards across the Alexander Valley and Sonoma Valley. This 100% Cabernet Sauvignon varietal captures the distinct terroir of Sonoma County, benefiting from low-vigor soils and a microclimate characterized by warm, sun-drenched days and cool evening breezes. Aged for 16 months in 60% new French oak, it pours a medium purple-ruby core with a luminous red rim. The aromatic profile unfolds gracefully with layers of dried strawberries, fresh and wilted red roses, crushed marionberries, and warm baking spices. On the palate, the wine delivers a lifted, precise, and mid-bodied texture where robust red and black fruits—notably strawberry, cassis, and plum preserves—intertwine with floral undertones. These flavors are grounded by an earthy note of damp autumn foliage, leading to a long, lingering finish framed by firm, grippy tannins that signify excellent aging potential.
Classic pairings include grilled ribeye steak basted with rosemary butter or slow-braised beef short ribs served over creamy polenta, as the wine's structured tannins easily cut through the fat of the meat. It also pairs beautifully with roasted duck breast featuring a tart blackberry or cherry reduction, which mirrors the wine’s own marionberry and plum fruit profile. For a lighter approach, a charcuterie board stocked with sharp aged cheddar, smoked gouda, and cured meats like prosciutto provides the perfect salty contrast to the wine's floral and baking spice undertones.
