Paloma’s 2012 Spring Mountain Napa Valley Merlot shows the plush, mountain‑grown richness the estate is known for, opening with aromas of ripe blackberry, black cherry, plum, and blueberry compote layered with mocha, baking spice, cedar, and hints of lavender. The palate is full‑bodied yet supple, carrying concentrated dark fruit, cocoa, espresso, and savory herb notes supported by fine, velvety tannins. The Spring Mountain elevation brings freshness and lift, giving the wine both power and elegance, while the magnum format preserves even greater purity and depth. As it opens, it reveals additional tones of dark chocolate, graphite, and sweet tobacco, finishing long, warm, and beautifully textured.

For food pairings, the wine’s richness and smooth tannins make it ideal with grilled lamb chops, braised short ribs, roast duck, or herb‑crusted pork loin.
