Moulin de Gassac Chardonnay is crafted from 100% Chardonnay grown in the cool, limestone‑influenced terroirs of the Hérault Valley, giving the wine its characteristic freshness and lift. It opens with bright aromas of lemon zest, green apple, white peach, and a touch of honeysuckle, supported by subtle notes of almond and a faint hint of vanilla from minimal oak influence. On the palate it is crisp, clean, and medium‑bodied, showing lively acidity and a smooth texture, with flavors of citrus, pear, and a gentle mineral edge that carries through the refreshing finish. Its balance and purity make it an easy partner for grilled fish, roast chicken, shrimp scampi, vegetable quiche, soft cheeses, or simple pasta dishes with olive oil and herbs, where its brightness complements rather than overwhelms.
