The Jean-Luc Mader Crémant d'Alsace Extra Brut is a bone-dry, organically farmed sparkler produced in Alsace, France using the traditional method. This energetic cuvée is typically made from an equal blend of Pinot Noir, Chardonnay, and Pinot Gris, rounded out with a tiny touch of Pinot Blanc. On the nose, it offers a powerful and complex aromatic profile featuring toasted sourdough bread, crushed stones, walnuts, and a distinctive oyster shell minerality layered over bright lemon zest. The palate is mouth-filling yet incredibly crisp, driven by a vibrant, racy acidity that carries flavors of green apple, quince, white peach, and fresh dough. Extended aging on the lees for up to three years lends the wine an exceptionally fine mousse and a creamy texture, balancing out its sharp, zero-to-low dosage profile. It concludes with a long, savory finish characterized by a barely perceptible sweetness and a clean, refreshing lift.Because of its lively acidity and pristine, bone-dry structure, this Extra Brut is a spectacular match for iodine-rich seafood platters, fresh oysters, or a scallop carpaccio with lime. The fine bubbles and zesty nature function like a squeeze of fresh lemon, cutting beautifully through the oiliness of fried foods like spiced calamari or fish rillettes.
