Tasting Notes
La Chapelle du Bastion Picpoul de Pinet is a textbook expression of the 100% Picpoul Blanc varietal. This ancient, indigenous grape thrives in France's sun-drenched Languedoc region. Grown along the shores of the Mediterranean, the vines benefit from over 300 days of annual sunshine. To preserve its signature bright characteristics, the grapes are harvested at night and crafted entirely without oak.
Visually, the wine pours a brilliant pale yellow accentuated by lively green hues. On the nose, it offers a refreshing aromatic profile highlighting bright citrus and delicate white stone fruits like peach and apricot. The palate features a crisp, zesty attack driving forward dominant flavors of grapefruit, green apple, and lemon. True to its name, which translates to "lip-stinger" due to its mouthwatering acidity, it features a beautifully balanced salinity and mineral finish. This creates a vibrant and persistent sensation of coastal freshness.
This bone-dry, high-acid profile makes it an incredibly versatile pairing option. Following the regional culinary rule of "what grows together goes together," it acts as a perfect match for local seafood harvested right beside the vineyards. It pairs beautifully with raw oysters on the half-shell, clams, mussels, and light, flaky fish.
