Winemaker Notes 

Koshi No Kanbai Tokusen is a refined Ginjo sake from Niigata Prefecture, crafted with Yamadanishiki rice polished to 50%, and it exemplifies the clean, dry “Niigata style” that the brewery helped pioneer. On the nose, it offers a gentle yet complex bouquet of steamed rice, white dumplings, and lactic notes like fresh cream, interwoven with subtle hints of cashew, banana cream, pear, and lychee. These aromas are delicately framed by floral touches of honeysuckle and orange blossom. The palate begins with a soft, full impression that quickly sharpens into a dry, mineral-driven finish, showcasing the elegance and precision of its craftsmanship. The sake’s structure is both supple and direct, with a lingering sense of umami and a crisp, rice-laden depth that becomes more expressive when gently warmed.
