The Kir-Yianni 2025 "The North" Assyrtiko is a vibrant, modern interpretation of Greece's flagship white grape variety, displaying a bright lemon-yellow hue in the glass. While the Assyrtiko varietal is historically famous for its bone-dry, searingly acidic, and volcanic expressions from the southern island of Santorini, this 100% Assyrtiko bottling is sourced entirely from the high-altitude continental terroir of the Ktima Kir-Yianni vineyards in the PGI Florina region of Amyndeon, Macedonia. Cultivated at an elevation of 600 to 700 meters in poor, sandy soils and influenced by cool mountain breezes and nearby lakes, the 2025 growing season yielded a cooler, more aromatically expressive style of the grape. Following meticulous sorting, the juice is fermented entirely in stainless steel and aged on its fine lees for four to five months to build textural roundness without any oak intervention, maximizing linear precision and crisp freshness. On the nose, the wine opens with intense and playful aromas of fresh peach, ripe apricot, and crunchy orchard fruit, beautifully layered alongside citrus peel, white blossoms, and subtle jasmine. The palate is exceptionally taut, lean, and clean, defined by a balancing, zesty acidity and an energetic inner tension that moves into a background of delicate flinty minerals and a touch of marine salinity. This refreshing structure resolves into a long, pleasant finish with a lingering citrus memory, making it an incredibly versatile companion for food. Thanks to its natural structural drive, it serves as a perfect match for classic Mediterranean fare, pairing effortlessly with fried calamari, grilled or poached fish fillets, roasted stuffed squid, and garlic-strewn shellfish. It is equally brilliant when cut against the richness of a pasta in a white cream sauce, lighter roasted pork dishes, fresh garden salads, or tangy white cheeses like feta and soft goat cheese.
