The 2024 Illahe Estate Grüner Veltliner is a vibrant, mineral‑driven expression of this Austrian varietal, crafted from 100% estate‑grown Grüner Veltliner in Oregon’s Willamette Valley. Left to soak on the skins for added flavor and then fermented in acacia wood, the wine shows layered aromatics of dried apricots, honeycomb, lemongrass, ginger, and the classic pinch of white pepper, creating both freshness and depth. On the palate, it is clean, textured, and lively, shaped by Illahe’s sustainable farming and careful, low‑intervention winemaking. Its bright acidity and savory‑spiced profile make it an excellent partner for oysters, Thai curry, and other dishes that benefit from a crisp, aromatic white wine.
