Domaine du Trignon 2025 Viognier
Tasting Notes
The Château du Trignon 2025 Viognier is a beautifully expressive, 100% monovarietal white wine from the Côtes du Rhône region in France. The Viognier grape itself carries a rich history; native to the Northern Rhône Valley, it nearly faced extinction in the 1960s before experiencing a global renaissance. While many producers in the Southern Rhône blend Viognier with other white varieties like Marsanne or Roussanne, Château du Trignon intentionally vinifies it entirely on its own. This highlights the grape's signature exotic aromatics, medium-to-full body, and characteristically rich, oily texture. Fermented in thermo-regulated stainless-steel vats to preserve its freshness, the 2025 vintage showcases a stunning straw-yellow hue with an intense, fragrant bouquet. It bursts with prominent aromas of ripe apricot, mango, and yellow peach, beautifully intertwined with notes of vanilla, toasted dried fruits, and fresh floral undertones like acacia and honeysuckle. On the palate, the wine is supple, creamy, and round, flawlessly balancing its natural texture with a bright, lively acidity and a lingering, clean mineral finish.
This wine's unique combination of weight and vibrant fruit makes it exceptionally versatile for culinary pairings. The estate specifically recommends pairing this bottle with rich, earthy, mushroom-based dishes—such as a wild mushroom risotto or a creamy chanterelle pasta—as the wine’s fullness cuts through the density of the food. It also complements succulent pork loin or roasted chicken infused with mild spices, apricots, or citrus glazes. For cheese pairings, consider serving it alongside young, semi-soft options or goat cheese. Furthermore, its subtle notes of vanilla and ginger make it an excellent match for moderately spicy Asian cuisine, including flavorful Vietnamese Bo Bun noodle bowls
