The Domaine de Thalabert 2022 Mule Blanche Crozes-Hermitage by Paul Jaboulet Aîné is a precise and sophisticated Northern Rhône white wine. Crafted as a masterfully balanced blend of 95% Marsanne and 5% Roussanne, the grapes are sourced from the oldest estate in the Crozes-Hermitage appellation, where vines average 50 to 70 years old. In the glass, it presents a bright, clear blonde color with silvery highlights. The bouquet opens discreetly with aromatic layers of honeysuckle, fresh white flowers, verbena, and delicate peach, subtly accented by notes from aging on fine lees. On the palate, this medium-bodied white is ample and generous, delivering flavorful concentration of ripe pear, yellow apple, melon, and candied lemon. Bright, steely acidity balances the rich mouthfeel perfectly, steering the wine into a clean, chiseled finish highlighted by lemon zest, a pleasant gastronomic bitterness, and a distinct mineral, saline freshness

It matches exceptionally well with delicate fish preparations, such as a traditional monkfish blanquette or trout meunière with almonds, where the wine’s texture mirrors the rich sauces while its acidity cuts through the fat. The vibrant minerality and stone fruit layers also elevate shellfish, crustaceans, grilled scallops, escargots, and frog legs. For meat courses, its generous body beautifully supports sweetbreads in a cream sauce, roasted poultry like chicken or turkey, and even rich starters like semi-cooked foie gras.
