Distiloire Vermouth Douce Folie Bio Rouge is an artisanal, organic Italian-style sweet vermouth crafted in small batches by the Distiloire distillery near Nantes in the Loire Valley. Breaking away from commercial practices that use caramel coloring over white wine, this vermouth obtains its 100% natural, slightly tiled light-red hue directly from its grape blend. The vinous base is structured from a unique varietal composition of 80% Muscadet (Melon de Bourgogne) AOC and 20% Cabernet Franc IGP Val de Loire sourced from local biodynamic vignerons. It is macerated with 14 organic botanicals and spices, including gentian, wormwood, rosemary, Roman chamomile, Madagascar pepper, orange, and vanilla.
The vinous character and balanced bittersweet framework of this vermouth make it a brilliant match for a variety of small plates and savory appetizers. Traditionally, the acidity of the Muscadet base and the herbal undertones pair beautifully with classic Mediterranean tapas, particularly vinegar-braced or salty bites like salt-cured anchovies, pickled green olives, and peppers wrapped in seafood. The Cabernet Franc elements and dark cherry notes also complement charcuterie boards featuring cured hams and duck terrines, or hard, pungent sheep's milk cheeses balanced by a dollop of tapenade. For dessert, its vanilla and spice finish harmonizes smoothly with dark chocolate tarts or fruit-forward desserts featuring roasted plums or cherries.
