The 2023 DeLille Cellars Cabernet Sauvignon from the Columbia Valley AVA is a full-bodied, structured red wine crafted as a debut regional release to highlight the purity and complexity of Washington State fruit. Composed of 84% Cabernet Sauvignon and 16% Syrah, this varietal blend benefits from the region's long, sunny days and cool evenings that slowly ripen the fruit while preserving bright acidity. The wine features an alcohol content of 14.5% ABV and undergoes an 18 to 20-month aging process in French oak barrels (20% new) to refine its bold profile.

The wine opens with a striking dark ruby center fading toward a softer crimson rim. The bouquet offers a captivating array of boysenberries, dark cherry, blackberry jam, and blueberry gelato, combined with complex undertones of dusty earth, fennel seed, dried lavender blossoms, and sweet pipe tobacco. On the palate, it exhibits exceptional drive and depth, presenting core flavors of cassis and concentrated black fruit highlighted by notes of bittersweet cocoa, roasted espresso, and dried savory herbs. Its sturdy, well-sculpted tannins yield a chewy, polished structure that benefits from decanting, leading to a long, persistent, and flavorful finish.

Given its rich tannin structure and dense core of dark fruit, this robust blend is tailor-made for hearty, protein-rich main courses. It pairs exceptionally well with roasted or grilled red meats such as beef short ribs, lamb shanks, grilled steak, or venison cheeks, where the meat's fats beautifully soften the wine's firm tannins. For casual pairings, it effortlessly elevates premium, wood-fired gourmet burgers.
