It is widely regarded as one of the standout vintages of Mundus Bacillus Terrae, showcasing the elegance and power achievable from Catena Zapata’s most celebrated high‑altitude terroir.

Tasting Notes

The 2016 Mundus Bacillus Terrae opens with intense aromas of blueberries, violets, graphite, ink, and earth, supported by the cool‑climate freshness of this El Niño‑influenced vintage. On the palate it is concentrated and tightly focused, offering rich dark‑berry fruit, smoky mineral notes, and a firm, chalky tannic structure balanced by high natural acidity. The wine is made from 100% Malbec grown at nearly 1,400 meters in the Adrianna Vineyard’s limestone‑rich soils, fermented partly in concrete with whole clusters and aged 18 months in French oak. Its depth and tension make it an excellent partner for grilled lamb, ribeye, venison, mushroom dishes, truffle risotto, and aged cheeses, where its acidity and tannins complement richness and umami.
