Pedro Ximenez is one of the grapes that has made the wines of Sherry famous around the world, but Bodegas Marisol Rubio in Castilla La-Mancha, they grow it to make a dry white. A rare dry, unfortified Pedro Ximénez — not the sweet sherry style the grape is known for. Straw-gold in the glass with orange highlights. The nose offers jasmine, wet grass, and infused spices, with hints of lime peel and bread crumb. Fresh and balanced on the palate, showing peach, apricot, and citrus zest with a faint chalky minerality. Fermented in concrete tanks for extra freshness and finesse. A distinctive, food-friendly white from a region where PX is almost never grown.
