Shinas Estate 2023 The Guilty Cabernet Sauvignon (Victoria, Australia)
The 2023 vintage incorporates 14% Shiraz into the blend, bringing an inviting touch of spice and warmth to a core of fresh cassis, dark cherry, and redcurrant. Fermented whole-berry in open-top stainless steel tanks and aged for twelve months in used 300L French oak barrels, it preserves a bright, natural acidity while keeping oak influence subtle and integrated. The palate delivers generous fruit intensity and plush texture, perfectly balanced by fine, structured tannins and a long, savory finish.

Le Roi Rouge 2024 Cabernet Sauvignon (Pays d'Oc, France)
 Grown in sun-drenched Mediterranean vineyards in the Languedoc, this bottling delivers classic Old World character. Expressive aromatics of black plum, crushed blackberry, and cassis are woven with savory accents of cracked peppercorn, dried oregano, and tapenade. Smooth and juicy red fruit on the palate is supported by refined minerality, precise tannins, and a light touch of baking spice through the finish.

Noah River 2023 Cabernet Sauvignon (Napa Valley, CA)
A complex nose of brambly blackberry, plum, orange peel, and dried marjoram opens into secondary notes of cedar and tobacco leaf. Fermentation in stainless steel protects the purity of the fruit, while aging in French and American oak introduces subtle accents of vanilla and dark cocoa. Medium to full-bodied with a soft, rounded texture, it delivers rich dark fruit alongside bright red berry acidity and a long, savory finish.

Far Mountain 2021 Fission Cabernet Sauvignon (Sonoma County, CA) 
Sourced from 50-year-old, dry-farmed vines planted at high elevation in the volcanic soils of the Moon Mountain District, this bottle displays intense site-driven focus. Aromas of dark mountain berries, crushed bay leaf, fresh thyme, and lead pencil graphite lead into a structured, deeply concentrated palate. Layers of muddled mint, sappy blackberry, and iron minerality are bound by firm, brooding mountain tannins that signal significant cellaring potential.

Bottles are 750ml each unless specified otherwise.
