The 2023 Aguila País is made from 100% País sourced from the historic Adrián Torres vineyard, planted around 1800 in Cerro Verde, Itata. The vines grow on granitic soils at 650 ft elevation and are farmed sustainably. The wine is 100% destemmed, fermented naturally over ten days with native yeasts, and aged 12 months in neutral French 225L barrels, resulting in a pure, unmasked expression of the grape. In the glass, it typically shows wild raspberry, pomegranate, white pepper, and subtle earthy notes, with a juicy, medium‑bodied palate and the lightly rustic tannins characteristic of País. The tension between bright acidity and savory spice gives it excellent drinkability and lift.
Food pairings for Aguila País lean toward dishes that complement its freshness and spice. It pairs beautifully with grilled chicken, pork, charcuterie, roasted vegetables, empanadas, herb‑driven dishes, and lighter red‑sauce preparations.
