Buil & Gine 2019 "Buil" Toro
While Buil & Giné initially built their storied reputation in the rugged, slate terraces of Priorat, Xavier Buil’s vision for crafting pure, place-driven wines naturally drew him westward to the historic Denominación de Origen of Toro. Located along the high plateau of Castilla y León, Toro is celebrated for its harsh continental climate, extreme diurnal temperature shifts, and ancient, ungrafted vines rooted in cobble-strewn, sandy clay soils. Here, the local clone of Tempranillo—known as Tinta de Toro—develops exceptionally thick skins, producing wines of legendary power, deep concentration, and remarkable longevity. Applying their trademark commitment to sustainable viticulture and meticulous single-vineyard focus, Buil & Giné set out to capture the raw muscle of Toro while applying modern finesse to tame its formidable tannins.
The 2019 "Buil" Toro is a stunning expression of this extreme landscape, delivering extraordinary richness without sacrificing detail or freshness. In the glass, it opens with an opaque violet hue and an aromatic burst of ripe crushed blackberries, dark plums, and black cherries intermingled with warm cocoa, licorice, and fragrant sweet oak spices. The palate is full-bodied and robust, coating the mouth in concentrated dark fruit layers that are seamlessly framed by mature, tightly woven tannins and a vivid streak of balancing acidity. Subtle notes of roasted coffee bean and crushed gravel trail through a long, muscular finish, making this an ideal companion for prime cuts of grilled ribeye, braised short ribs, or aged sheep’s milk cheeses.
