It was originally an unpretentious, sharp, low-alcohol wine crafted purely for personal household consumption and local fishing village taverns. Because the raw wines were naturally tart and tightly wound, locals traditionally poured them from a dramatic height into flat-bottomed glasses to aerate the wine, soften its aggressive edges, and release a light, prickle of trapped carbon dioxide.
