Kirin-Zan Junmai Daiginjo
Winemaker Notes
This 7th generation family owned brewery was founded in 1843 and still practices the traditional "farm to table" method of sake making, where the brewers (including the toji - head brewmaster) brew their sake during the winter months and tend their rice fields in the summer. All of Kirin-zan's rice is sourced from their own fields or other local growers within 10km of the brewery. Like most Niigata sakes, Kirin-zan is light, crisp and dry, but the many subtle notes that lie underneath the initial impressions set Kirin-zan above most of their excellent Niigata contemporaries. Beautifully packaged, it is clean, smooth, and balanced with a light to medium body and great concentration. It exhibits flavors of citrus, peach, mineral, pineapple, and green tea. The finish is soft and long.
